Directions

None of these measurements need to be exact. Add as little or much as you like. Simply add a little extra nut butter & honey as you add ingredients so that your mixture stays bound togther.

Step 1: Chop dates in food processor until you get small to medium size chunks. Remove & set aside.

Step 2: Place nuts in food processor and chop until you get small to medium size chunks. Do not over process or you will end up with nut butter.

Step 3: Combine all ingredients (except for dipping chocolate) into a large bowl and mix by hand.

Step 4: Press mixture into a 8 x 8 square cake pan that has been lined with wax paper.

Step 5: Melt dipping chocolate to pourable consistency and spread evenly over the nut/oat mixture.

Step 6: Cool in fridge until chocolate has hardened. Approximately 10 to 20 minutes.

Cut into bite size pieces. Place in airtight container and keep in fridge until ready to use.

Your mixture make be crumbly if you choose to use less nut butter but it's still tasty.

Serving Suggestion: Warm a few pieces in the microwave and top with ice cream.

Or...Omit chocolate coating & crumble like granola an serve in a bowl with milk.

Tip: Heat your almond butter (or whichever nut butter you choose) to almost pourable consistency. It is easier to mix together that way.

**Make your own almond butter** Place 1 to 2 cups of almonds in food processor. Run on high until creamy.

You may also grind your flax seeds first if you do not like whole flax seeds.

So good, but definately not low calorie. Bite size chunks will help keep your waistline civil. I love the crumbly bits left in the pan. I put them in a bowl with milk & eat it like granola.
