Cheddar Potato Chunk Soup by Chef boomadonna
Delicious, and great with a beer!

1. In a medium saucepan heat the olive oil under medium heat. Add the onion, celery, and garlic. Cook for 2 minutes, stirring frequently.
2. Add the potato. Cook for an additional 10 minutes, stirring frequently.
3. Add the broth, cream cheese, cheddar cheese, flour, parsley, Adobo, salt, and pepper. Stir to ensure the cream cheese dissolves into the broth.
4. Cover and reduce to low heat. Cook for 20 - 30 minutes, occasionally stirring.
Serve with shredded cheese and Bacos as toppings.
