Directions

Preheat oven to 350.

Step 1: Grind flax seeds in spice grinder

Step 2: Cream butter, Sucanat, Sucanat w/honey into a grainy paste. Add eggs & vanilla & beat well.

Step 3: Mix dry ingredients and stir into creamed mixture.

Step 4: Add coconut & chocolate chips

Place 1" balls of dough on cookie sheet two inches apart. Bake for 10 minutes.

Tips: For best results chill dough 30 minutes before baking.

White sugar may be used in place of Sucanat w/honey Brown sugar may be used in place of Sucanat White flour may be used in place of freshly milled four

Dough freezes well. Section unused dough into logs. Roll in cling wrap and freeze. When needed, remove from freezer, slice dough & bake.

This cookie is great for ice cream sandwiches. Not overly sweet and full of texture tends to compliment ice cream well.
